Holiday Green Beans With White Pearl Onions

How many of you loooove green beans? I do! I really do. I love their crispness,their vibrant color,their sweetness and the fact that they pair with almost anything!I eat them in stir fries, casseroles or even by themselves. Canned, frozen, but I like them best when their fresh, because I get to pick them out just like my Nana did, by snapping each one in half to check for freshness kinda time consuming but that’s what I love. When I first came up with this recipe I wanted to saute shallots with the green beans,but my mom said I should put white pearl onions. Now at first I was sorta skeptical because i thought those are way too big for green beans and chopped shallots would be the perfect size and add the right amount of flavor, but Mama’s always (and I do mean always) right.It turned out much better and more flavorful than I imagined. Thanks Mom!

Ingredients :
1 1/2 pounds of fresh green beans trimmed
1 (10 ounce) package of pearl onions peels and halved length wise
2 tablespoons of olive oil
1 tablespoon of butter
Salt and Pepper
1 teaspoon of sugar
Directions:
Step 1: In a large skillet heat the butter and olive oil. When it is hot add in the pearl onions and sprinkle sugar over them.saute for about 7 minutes or until the onions start to caramelize and become tender.Add about 1/4 cup of water,cover,reduce heat and let it simmer for about 5 minutes, checking every so often so make sure it’s not burning or if it needs a little more liquid.
Step 2:Meanwhile, put your green beans on to boil in a pot of salted to taste water and cook until crisp tender. Drain and rinse under cold water to stop the cooking process.
Step 3: Add the green beans to the onions and saute until mixture is heated all the way through. Serve immediately and enjoy!!! To give it a little pizazz, garnish with sliced almonds. Yuminess !

Tip: For easy peeling of the pearl onions place them in a bowl and cover them with hot water. Let them sit for about 3 minutes and then peel. Soooo much easier!
