Brussels Sprouts

    I have a few questions that just need to be answered. What’s the problem with Brussels sprouts? Why do they get such a bad rap for being just gut wrenchingly disgusting? It could be how they were prepared when the person tried them. Were they over cooked and flavorless?Maybe it was the presentation. For example, when I was at the store the other day, there were Brussels sprouts in the deli counter that looked old , over cooked and I admit, disgusting.

    Oh Brussels sprouts! How misunderstood you are!

    My mom told me that when she was growing up, she hated Brussels sprouts . So much, that she tried feeding them to her dog, and he wouldn’t even eat them! One day I just had to try them for myself, and right off the bat, I loved them. They were sweet, crisp tender and tasted like cabbage.And one serving of Brussels sprouts has 142% of the daily value of vitamin C!  What is wrong with that? Blame it on my taste buds, which my mom calls extremely advanced for my age,but Brussels sprouts might actually be my favorite vegetable! I’d eat them everyday if I could!For those of you who just hate Brussels sprouts, I encourage you to step out of the box and try them again, using this recipe.Its green and red,perfect side dish for the holidays or just a regular day,and it’s a great way to gt the kids to eat their vegetables! You might just end up loving them just like me!

    2 pounds of Brussels sprouts thinly sliced
    3/4 cups of dried canberries
    2 medium shallots minced
    2 1/2 tablespoons of olive oil
    salt and pepper to taste
    1/3 cup of chicken stock
    1/4 cup of walnuts

    Step 1: In a large skillet heat the oil. Saute the shallots on medium heat for 1 minute . Add the Brussels sprouts and cranberries,season to taste with salt and pepper,and cook until the sprouts are crisp tender about 2 to 3 minutes. Add about 1/3 cup of chicken stock .Toss in walnuts and serve right away! Enjoy!

    I absolutely love Brussel sprouts and so do my kids and my hubs. I totally agree with you, they must be prepared the right way and the people who don’t like them didn’t have the pleasure of enjoying them the right way.

    I like to make mine with butter sauce,bacon and sometimes with a bit of Romano cheese.

    I love your recipe and I will be trying it out next.
