Kale salad

Every year, it seems like the most popular resolution is to get healthy. So at the beginning of the year you’ll hear more commercials and see more ads for exercise machines, and weight loss surgeries & programs, and they all guarantee you’ll cleanse your body of toxins and get healthy in X amount of time. Most of advertisements are pure quackery, so why fall for them?
One day, while I was surfing the web, I stumbled upon an article that talked about the nutritional values of kale. In short it said the kale is practically vitamin K incarnate, power-packed with vitamins A and Beta carotene, and rich in calcium. So it’s great for the immune system, bone strength, and helps protect the body against cancer. Isn’t that spectacular!?
So with this new found knowledge I had to share it with you, my followers,(thanks for viewing by the way!) And with so many recipes for kale, I wanted to share one with you that preserved all of the vitamins and minerals, while still being delicious and kid-friendly,and this is the perfect one. To good health!
One medium bunch of kale( washed THOROUGHLY, and pat dry)
1 cup of dried cranberries
1/2 cup of pumpkin seeds
Step 1: In a food processor, finely chop the kale. Remove blade and set kale aside in a large bowl.
Step 2: Toss kale with remaining ingredients and serve with a drizzle of your favorite fruity vinaigrette.

I’ve never cooked with kale, but this sounds really good! Who could go wrong with craisins and pumpkin seeds?
