Turkey Chili

YAY! FOOTBALL SEASON IS HERE! If your ready for football, tailgating, bar-b-quein’- hot-wing-dippin’ cheering for your favorite team until you can’t cheer any more, let me hear you say- “YEA SHAUNIECE I’M READY!! Bring it on!!”
That’s the spirit!
Ok, now we need some playoff food, you know that stuff that’s over priced in concession stands, therefore you bring your own? Yep, that stuff.
Problem: Some of that food is full of cholesterol, and fattening. ( New Year’s Resolution interference)
Problem: This is HEALTHY Cooking for kids, I can’t post a recipe that not healthy.
Solution: Make these foods in a healthy way. TADA!
So let’s start off with chili, I know that may not sound healthy, but if you substitute turkey for beef and load up on the veggies, you have simple and delicious healthy turkey chili. Problem Solved.
Ingredients:
1 pound of ground turkey
1/2 cup of chopped onion
1/2 cup of chopped yellow, orange, or red bell pepper, not green
1/2 tablespoon of fresh minced garlic
1 15 ounce can of roasted garlic tomato sauce
1 15 oz can of crushed tomatoes un-drainded
1 tablespoon of chili powder
1 teaspoon of ground cumin
1 cups of frozen mixed vegetables (corn,peas,string beans, and carrots) thawed and rinsed
1 15 ounce can of pinto or black beans, rinsed and drained
olive oil
Directions:
Step 1:In a large dutch oven, saute onions bell pepper, and garlic on medium low heat until slightly tender. Add turkey. Sprinkle in chili powder, and cumin. Using your handy dandy potato masher, break up the meat into very small pieces, ans stir in tomatoes.
Step 2: Stir in Tomato sauce , and tomatoes. Bring mixture to a boil, then reduce heat, and simmer covered for 10 minutes.
Step 3: Stir in vegetables, and beans, return to boil, then reduce heat and simmer for 5 more minutes. Laddle into bowls and serve with your favorite chili topping, or side.
