Caramelized onion dip
-
Once upon an afternoon, I was sitting on the front porch, reading a book, and eating some veggies & onion dip, which was made with dry onion dip mix, and I started thinking, before there was the powder, people actually made onion dip from scratch. How did they do it? And was it so hard that somebody had to come along, and simplify it, by drying it out? I had to investigate so I went online, and found that our society has gotten pretty lazy, because onion dip is very simple to make. People have gotten so use to the packaged stuff, that making homemade onion dip has it’s become a lost art. So here is my twist on onion dip, and I figured to add extra pep, I’d caramelize the onions, and the end result was an even more fabulous dip!
Ingredients:
1 large Sweet onion (preferably vidalia)
8 oz of softened cream cheese
1/2 tablespoon of butter
1/2 tablespoon of olive oil
1/2 teaspoon of Worcestershire sauce
pinch of nutmeg
Directions:
Step 1: In a medium skillet, heat butter and oil over medium heat. Stir in onions, reduce heat to medium low, cover and cook, for about 15 to 20 minutes or until onions are golden brown.
Step 2: While onions are caramelizing, in a medium bowl, beat cream cheese, Worcestershire, nutmeg, and salt and pepper to taste, if needed. Mix until lumps are out, and consistency is thick and creamy.
Step 3: when onions are caramelized, set aside to cool for about 5 to 10 minutes. Then fold them into cream cheese mixture. and refrigerate for at least 1 hour before serving. Taste great with crackers or veggies.
