Citrus Ricotta Cookies

  • Oh When the Saints go marchin’ in…

    On Sundays, I usually think about what I want to blog about throughout the week, and experiment on those recipes. This past Sunday I decided to try out citrus ricotta cookies, and as you all know this past Sunday was also the Super Bowl. Ha, let me just tell you, it was a very funny day. here’s a recap on how it went:

    Before the start of the big game, my mother and I bet 5 dollars on which team would win. She was for the Saints because  her dad was from Louisiana, and I was for the Colts because I have a crush on Peyton Manning( that is one handsome man!) Any who – the bet was on, and the game was about to start, so before it did, I went to work on my cookies, put them on to bake, and went to the living room to  watch the game. So far so good, Manning the Colts were leading the way! But all of a sudden I caught a whiff of something burning, so I ran to the kitchen, opened the oven and OH NO, found my cookies burnt to a crisp. So I threw them out,  and tried again. This time with a very watchful eye…

    By the time the  second batch  of cookies were done, cooled off and iced, Half time started and the Saints really were marching in. My mom was sooo excited, she kept yelling out WHO DAT! I watched my 5 dollars practically jump out of my pocket and into my mothers hands, and the rest is well history.

    But even though my team lost, the cookies I made, were a hit. I mean when I tell you those were the best cookies I have ever eaten, I not lien’! They were moist an light. Sweet with a hint of lemon. They literally melt in your mouth.

    Ingredients

    Cookies

    1 1/4 cup of all purpose

    1 cup of sugar

    1/2 teaspoon of baking powder

    1/2 teaspoon of salt

    the zest of a half of lemon

    1 1/2 tablespoons of lemon juice

    1 egg

    1/2 stick of butter

    7.5  oz of ricotta cheese

    For the icing

    1 cup of powdered sugar

    1 tablespoon of lemon juice

    1/2 teaspoon of lemon zest

    Directions

    Preheat oven to 375 F

    Step 1: In a large bowl, combine flour, baking powder, and salt, set aside.

    Step 2: Mean while in the bowl of a stand mixer(whisk attached), cream together butter and sugar. Add in eggs and mix until well combined. Lastly blend in lemon juice, lemon zest, and ricotta cheese, until incorporated. Stir in dry ingredients, about a third at a time. Refrigerate for about 20 minutes

    Step 3 : Meanwhile prepare icing. Combine all ingredients, and set aside. Line a cookie sheet with parchment paper, and using a cookie scooper, spoon cookie dough onto paper.Bake for 15 minutes or until edges are slightly brown. When they’re done let them rest on a cooling rack for about 20 minutes. Spoon about 1/2 teaspoon of icing onto each cookie, and let the icing harden before serving.
