Watergate Jello

Here in my family we love to celebrate St. Patrick’s Day, for a few reasons.
1: We’re part Irish(so I’ve been told ;) &
2: We love love love green
So this St. Patty’s day we threw a potluck party ( get it pot like pot of gold which equals luck… anywho) I volunteered to bring one of my mom’s all time favorite deserts- I mean she loved it so much it was served at her wedding. It’s called Watergate Jello. What it is, is lime jello, blended with cream cheese, speckled with pineapple and walnuts, served with a swirl of whipped cream on top. It’s the peeeerfect balance between sweet and tart, creamy, yet crunchy, but the best part- IT’S GREEN !Happy St Patrick’s day !
Ingredients:
1 package of prepared lime jello
1/2 cup of crushed pineapple
3/4 cup of cream cheese
1/2 cup of chopped walnuts, plus extra for garnish
whipped cream
Directions:
In a blender, combine prepared lime jello and cream cheese, until smooth, and creamy. Add mixture to a large bowl, and fold in walnuts, and pineapple, then transfer to a really pretty jello mold, then refrigerate until set. When ready to serve, place mold into a large bowl of hot water for just a few seconds , so it will come out easily , then turn upside down onto a large plate. Enjoy with whipped cream and garnish with chopped walnuts.
