Presto It’s Pesto!!

Whenever my mom and I go to Santa Monica, we cannot leave until we swing by our favorite cafe and pick up a box of their delicious Penne with pesto, grilled chicken, and sun dried tomatoes. It’s the ultimate pasta salad, and we absolutely love it. The pasta is al dente, the chicken is moist and tender, and the sun-dried tomatoes, ah the sun-dried tomatoes, they’re not chewy or hard, they’re fresh, and tasty. And the Pesto, it’s the best part. The basil is grown in the restaurant’s back yard, the oil and cheese is imported from the owners home country of Italy, and the garlic is sent in by the cases from Gilroy California, no wonder the pesto taste so good!
But anywho my mom and I love the pasta salad so much when we can’t get it from the cafe, we begin to have serious cravings for it,(mainly the pesto sauce), luckily we keep bags of fresh basil in our refrigerator ready for use. So plug up the food processor, set out all the ingredients and PRESTO WE HAVE PESTO!!!
Now what I love about pesto is, like many sauces it’s so versatile, you can use it as a sauce for a sandwich, a dressing for a salad, or even as a tasty dip.and even better – you can refrigerate or freeze it, so it ready for use whenever you need it!

Ingredients:
1 cup of fresh basil
1 cup of fresh spinach
1/4 cup of pine nuts
1/3 cup of grated Parmesan cheese
1/2 cup of olive oil
1 medium size clove of garlic
Directions:
n a food processor or blender, blend together basil,spinach, cheese, garlic and pine nuts. Stir, then add in your olive oil, then pulse until desired consistency is reached. Season to taste with salt and pepper. Let it rest for a few minutes so that all the flavors set in . Refrigerate or serve immediately. Goes great with pasta, over chicken, as a spread for a sandwich, or even as a dip. Enjoy!
