Pan Seared Scallops with Smashed Fava Beans (click here for pictures!)

My food processor broke.It just stopped working. It has failed to cooperate with me.
My red, 3 cup, compact, go to, light weight and convenient, special miniature food processor has bit the dust. It’s gone, capitol K Kuh-put. Forever. I’ll miss you little dude.
How’d this happen you ask? Well you see… what had happened was… I was trying to make a garlic-herb compound butter for the rib-eye steaks I was pan frying. When I tried to insert the blade into the food processor it wouldn’t snap into place, and the blade wouldn’t rotate, so I removed it and tried again, but with a little push. That seemed to work, but when I was done processing, I couldn’t remove the blade. I had my mom to take out the blade, my brother his friends,(of course we all had to be very cautious the blade is very sharp) but it just wouldn’t budge. I was so upset, that was my favorite food processor, I mean aside from my mom’s jumbo 9 cup, multiple attachment, heavy, heavy duty, Mack daddy, blue Willow food processor. Don’t get me wrong I love the big food processor, but the other one was my absolute favorite.
On a brighter note, I have a new favorite legume and they are called Fava beans. You may know them from one of they’re other many names like Vicia Faba, Broad bean, Field bean, Bell Bean, and even the Tic Bean. But I like Fava, it’s simple and really fun to say. Try it – fah-vah.
I first saw them on Food Network when Anne Burrell , sauteed them with mushrooms and asparagus, for a delicious side dish. Later on that day, I saw a recipe for pureed Fava Beans in a Taste of Home Magazine. And the Next day , when I went my local farmers market, one of my favorite vendors was selling them! After that,I just had to get them.
So I guess Yall are wondering how does my food processor being broken had to do with my new obsession with fava beans? Well when I got home,from the farmers market, I wanted to puree the fava beans like I saw in the magazine. But I couldn’t because my food processor was broken. But I didn’t let that stop me I was determined to try out those fava beans, so instead of using my food processor, I used my handy dandy potato smasher to smash up the beans like in the recipe. Two words : Ta-sty. Enjoy
Ingredients:
For the Fava Beans:
2.5 cups of shelled fava beans
salt and white pepper to taste
one small clove of garlic
2 tablespoons of olive oil
1 tablespoon of butter
For the Scallops:
12 scallops, rinsed under cold water and pat dry
salt and white pepper ( I fell in love with white pepper!)
1 tablespoon of olive oil
First cook your fava beans. To do so, add the fava bean sand garlic clove to a large pot, cover with water, and generously salt. Boil for about 7 to 10 minutes, or until tender and no longer starchy.
When done, remove garlic clove, drain and rinse under cold water, then place the beans in an ice bath, for 2 to 3 minutes. Remove the outer skins from the beans and set aside.
Heat olive oil in a large pan, then add the fava beans. Once beans are heated, use a potato smasher to smash the beans until an almost smooth consistency is reaches, stir in butter and a pinch of white pepper turn down heat until ready to serve, stirring occasionally.( If it becomes too dry, add a pinch more butter)
When fava bean smash is almost done, cook your scallops.
Heat olive oil in a large nonstick skillet to medium high heat. Season the scallops to taste with salt and pepper, then evenly arrange scallops in the skillet, (making sure not to over crowd it). The scallops are ready to flip when they start to slightly brown around the edges, and the sides turn opaque. Cook on other side, until slightly browned, and opaque, then serve along Fava beans. Top with very thin slices of green onions for a tasty garnish!

Shauniece, that looks awesome. I just moved and all my cooking stuff is on its way here, but I am making this as soon as my gear gets here! I don’t think I’ve ever had fava beans… but mmmmmmmm!
